KETO STRAWBERRY CAKE

This low carb strawberry cake is light and fluffy. It is easy to make with just one bowl and a whisk.
INGREDIENTS
- 1/2 cup (4 oz) unsalted butter melted
- 1/2 cup (100 grams) granular erythritol
- 5 large eggs
- 1 tsp vanilla
- 2 cups (183 grams) superfine almond flour
- 1/4 cup (26 grams) coconut flour
- 1 tbsp baking pow
- 1/2 cup (80 grams) chopped fresh strawberries (about 4-5 small strawberries)

STRAWBERRY GLAZE
- 1/2 tbsp freeze dried strawberry powder
- 1 tbsp heavy cream see notes for substitutes
- 4 tbsp powdered erythritol or more as needed
